Baked Eggs

Perfect for brunch.

Ingredients:

6 bread slices, cut in cubes
2 cups grated mild cheddar cheese
1 cup cooked, cubed ham (pork or turkey)
1/4 cup chopped green bell pepper
1/2 cup finely chopped onion
6 eggs
3 cups milk

Preheat oven to 375 degrees. Mix bread, cheese, ham, bell pepper and onion. Spread in a 13x9x2-inch greased baking dish.
Whisk eggs and milk together; pour over the top.
Bake uncovered for 45 minutes.

Makes 8-10 servings.

Breakfast Muesli

Also known as "Overnight Oats."

Ingredients:

2 cups rolled oats
2 cups milk
2 Tbsp. apple cider vinegar
1/4 cup chia seeds
1/4 dried cranberries
1 apple, cored and diced
1/4 cup sliced almonds

Combine all ingredients and let set overnight in the refrigerator.
In the morning, top with a dash of cinnamon or nutmeg.

Makes 4-6 servings.

Don't forget your own favorites - shredded coconut, raisins, blueberries, etc.






Delicious Drumsticks

So simple - so good!

Ingredients:

1/2 cup flour
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. black pepper
6 chicken drumsticks (about 1&1/2 pounds)
1/4 cup butter, melted and cooled

Preheat oven to 425 degrees. Mix flour, salt, paprika, and pepper in a bowl.
Dip drumsticks into butter; roll in flour mixture to coat.
Arrange in an ungreased 8x8x2-inch square pan. Bake uncovered until done, about 50 minutes.

Makes 6 drumsticks.

Easy Cheesy Turkey Loaf

Cheesy as in tasty - not trashy!

Ingredients:

1 lightly beaten egg
1/2 cup milk
3/4 cup rolled oats
1 pound ground turkey
1 finely chopped onion
salt or garlic salt to taste
1/2 cup shredded cheese
3 Tbsp. ketchup (optional)

Preheat oven to 350 degrees. Combine all ingredients except ketchup.
Pack into a loaf pan. Spread top with ketchup if desired.
Bake uncovered for 1 hour.

Makes 6 servings.

Tip for less greasy meatloaf - shape in pan, turn out and bake on cookie sheet.






Hearty Hamburger Tomato Stew

One that even the kids will like!

Ingredients:

1 lb. ground beef or turkey
1&1/4 cups chopped onion
2 cups sliced carrots
1 cup chopped green bell pepper
1 cup sliced fresh mushrooms
1 16-ounce can cut green beans, drained
1 16-ounce can corn, drained
3 stalks sliced celery
1 46-ounce can tomato juice
1 tsp. celery seed
salt and pepper to taste

Brown ground beef or turkey in a large saucepan. Mix in remaining ingredients.
Bring to a boil; reduce heat. Simmer covered for 30 minutes, stirring occasionally.

Makes 8 servings.

Quinoa Salad

Colorful as well as delicious.

Ingredients:

1 cup water
1/2 cup uncooked quinoa
3/4 cup finely chopped fresh parsley
1/2 cup finely chopped cucumber
1/2 cup thinly sliced green onions
1/2 cup finely chopped dried apricots
2 Tbsp. white wine vinegar
1 Tbsp. olive oil
1 Tbsp. honey
1/4 tsp. Himalayan salt
1/4 tsp. freshly ground black pepper
1/4 cup toasted pumpkin seed kernels

Bring water and quinoa to a boil in a medium saucepan.
Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
Spoon ino a bowl; fluff with a fork. Add parsley, cucumber, onions, and apricots.
Whisk vinegar, olive oil, honey, salt, and pepper. Add to quinoa mixture and toss well.
Top with pumpkin seeds.

Makes 4 servings.

Finely chopped ingredients permeate the salad for more flavor.
